I disagree. The pho in vietnam wasn't that good. Beef is in short supply there so they use a crap ton of MSG. Best bowl of pho I've had that wasn't in someone's home is Paris. Expensive AF but delicious.
i guess i would classify it as a stew. theres not enough broth/liquid in there to truly be soup, but too much to be considered a "dry" entree. if there is a spoon involved it is soup/stew! i would absolutely consider pozole a soup though!
It isn't. Tripe chunks have a rubbery, chewy, fatty, gristly texture. I'm open to trying new things. Once was enough for me. My hispanic folk told me to eat around it. No thanks.

The Vietnamese have known about egg noodles for a long time. Ban Pho is the type of noodles used in Pho which are flat rice noodles. Mi are ramen like egg noodles. Mi soups are not as popular as Pho but still pretty common.
I found a lot of other stuff wasn't as good such as Bun salads and Banh Mi. Maybe I just got lucky with the Pho in Vietnam.
Best pho place in Austin is Pho Phong Luu, period. It's the only one that even comes close to tasting home made. I would even go so far as saying their broth is better than most places in Houston. They have excellent banh mi's also. Weird hours though.
Yep, just not a big fan of tripe. Love the flavor of menudo, but I'd rather have better meat in it. As far as offal goes, sweetbreads cannot be beat.
Off the top of my head: 888, Hai Ky, Elizabeth Street, Saigon Le Vendour, Sunflower, Tan My Can't promise you all of those are still in operation.
