Our son calls pho “medicine soup” because he always wants/gets it when he is sick. It’s replaced traditional chicken noodle soup.
I prefer a nice brothy Pho, with all the meats. Especially the beef meatballs, tendons, tripe, etc. My problem is I tend to over eat and order a bowl too big
I like other soups more than either but for this thread will vote for Pho. Pho was one of the Vietnamese foods that I got consistently better in Vietnam than the stuff I can get here.
I looked into making my own pho and gave up. You gotta slow-cook beef bones for 24 hours and THEN you can start cooking pho. Not worth it. As a postscript, here's my Vietnamese best-of list: Pho: Pho Saigon (downtown) Banh Mi: Roostar (Gessner) Com Bo Luc Lac (a.k.a. Shaking Beef or Rock n Roll beef): Kim Tai or Huynh (downtown) Bun (noodles and meat): probably Thien Anh or Kim Tai (downtown) Damn...now I'm hungry
neither, but this comfort food hits the spot for me: wonton noodle soup w any combination of veggies and meat that absorb the tasty broth well the veggies include broccoli, napa cabbage, red pepper, lotus roots, re-constituted dried mushroom; for meat, shrimp, tripe and BBQ pork (or left over pork chop) these ingredients absorb the the broth well; the veggies provide a wide range of texture the mushiness of the re-constituted dried mushromm, the softness of the cabbage, the firmness of the broccoli and the crunchiness of the lotus rootssprinke some green onion and sesame oil on top; YUM
