Nice looking rig - sorry about the damage that sucks. I always thought temp was the way to go although you hear alot these days about the wiggle test. Did you try that? How long and at what temp did you smoke it?
Wasn't dry at all. Super tender and tasty. IMO, their only passable option is their pulled pork. It's not bad if it's your only option. I do like their fries, too.
Unlike other Pappas joints, Pappas just bought Luther's and didn't do anything to change the quality.
I don't even know how this chain stays open. It's one of the worst places I can recall going to in the last 20 years.
You should never go by temp but seldom are my briskets not done by 200 degrees especially if it's fatty. Did you wrap it and stick it in a cooler for a few hours before cutting into it?
I'll stop by there sometimes and just get spicy rice and macaroni and cheese to go. They have a runnier cheese sauce which for whatever reason is my preferred preparation for macaroni and cheese.

Yeah, the price is different at different places. The cheapest was the $11 price. Also saw it for $3.99 and $9.89 at other locations around town in the DFW area.
Tried The Pit Room last week Brisket was an A-, heavy on the pepper Pork Sausage was an A with cheese and jalapeños Pork ribs a B-, just okay. Cooked well but not seasoned to my liking Good spot.
