    Pescado a la Veracruzana

    Veracruz Fish

    Orange roughy (yeah I know Red Snapper, but...$)
    Orange, red, green bell peppers
    Garlic
    pepper
    olive oil

    Serve with Rice Pilaf

    Garlic, butter Baguet

    i dont have a specialty item...i tend to cook anything and everything. if i had to pick one meal i guess it would be some nice center cut grilled steaks (medium rare), with a potato, carrot, turnip medley, couscous, and some steamed green beans or grilled asparagus...

    mmmmmmmmmmmmm i love food

    I make some mean egg rolls when I'm up for it...which hasn't been in quite a while. Mmmm.....egg roll. Doh.

    Also, my Tortilla Delight is muy especial. I take one lb ground beef or turkey, 1 can cream of mushroom soup, 1 can cream of chicken soup, monterey jack and cheddar cheese, and jalapenos(optional).

    Grease well a big rectangular pan(dimensions unknown;)). Cook up the beef or turkey meat...add soups to meat...and bring to a simmer. Layer the pan with tortilla chips of your choice. Scoop the meat artery clogging solution(mmm....) over the chips and tap the pan on the counter to release bubbles. Top with Jalapenos and two cheeses(ugh...he said cheese). Heat oven to 400 - 450 and cook for 20 to 25 minutes. When done, you should have a well browned bottom with a piping hot top. Let cool and slice and serve. Espectacular....enjoy...then call your doctor :).

    There are lots of ways to do them. It also depends on how you like them. I don't like mine to have too much water -- I like them as noodles, not as a soup. My personal favorite is to get a plastic bowl that holds the noodles nicely. Fill the water up to where it is above where the noodles are. I had some bowls that I could wedge the noodle block into so that they could be totally immersed. DO NOT BREAK UP THE NOODLES BEFORE BEGINNING THE COOKING PROCESS!! That's just not right. Don't put the flavor packet in yet. Put them in the micro for six minutes. After about 4 or 5 minutes, take them out and stir them a bit. Not much, just enough to get them moved around so those on top get some water. Put them back in for the remainder of the time. When you pull them out, they'll likely have some foam at the top -- that is good. Use the fork to stir them around in the bowl a bit. Now, take your fork and drain them until you have as much water as you want. I usually don't leave much -- maybe 3 or 4 tablespoons at the most. Put the flavor packet seasoning in. Stir it around a lot. Make sure to get a good mixture. Sometimes I add a bit of water at this point. The amount of water will inversely determine the flavor level. Little water == strong flavor. Lots of water == less flavor. Now, you're ready to go. These are specifically for Maruchan Ramen. I don't like the others as much, but there is one called "Smack" that is pretty good too. Buy Ramen at Sam's for the best deal, but then again, how can 7/$1.00 be beaten?? I just like the convenient box they come in at Sam's.

    If you're ever hankering for a snack, get a Ramen noodle pack. Before opening it, crush it. Now open it and take the seasoning packet out. Dump the seasoning in, close the top of the bag, and swish it around to get the seasoning to disperse. Open it up and eat it like chips. It's actually pretty darned good.
