If your steak needs A1, you are eating some cheap ass cut. Just season with salt Sear both sides Just baste with butter and thyme. That's all that needs to be done to a quality cut steak.
yeah. I own a steakhouse. If you are going to soak a steak in a1 or order it medium well or worst, you might as well go to Western Sizzler or Texas Roadhouse and save yourself some money.

A friend of mine came over to my house a few months ago and I cooked steaks for him. He wanted them well done. . . . It was hard to do but I did it. Meh, a taste for everyone. Some people don't want blood coming out of their meat. Well done steaks can be delicious. However, needing sauce for a steak is definitely not a good sign, but not wanting to see raw meat is perfectly fine.

If you are getting it well done, make sure it is thin so it’s just the process of searing the cooks it through. If you insist on well done and a thick steak use sous vide so it doesn’t dry out, then sear quickly very hot with a lot of butter so you get some char. if you are getting it well done and putting A1 on it, just order a hamburger. You’re not tasting the meat much anyway, so texture is all that matters and it will be better due to the fat and cheese offsetting the dryness. Also I love Steven Adam’s and can’t wait to see him set brick wall picks all over the place.
