I've been to the Fiji's and it is absolutely amazing. Supposedly its like Hawaii was before Hawaii became too commercialized. The people are amazingly friendly, the beaches and water beautiful, and there are plenty of activities to do, or just lounge about, and enjoy the relaxing great time.
If u were going now and want a place relatively close I'd suggest St. Kitts and Nevis. But late summer early fall you'll have to travel farther for decent weather. Greek isles have terrible rocky beaches for the most part and will be very hot at that time. So try the Algarve (southern Portugal) instead.

GALVESTON! or if you must get away, a couple that havent been mentioned yet are puerta vallarta and puerto escondido, mexico. both are beautiful and pretty cheap. you can fly to oaxaca city, which is one of my favorite mexican cities and from there fly into escondido. escondido seems to be a less touristed version of vallarta - its in oaxaca and not easily accessible, which might make for its more secluded feel. great beaches and the cheapest, freshest fish ive ever had. escondido is usually ranked as one of the top 3 surfing spots in the world - waves are incredible! some of them looked to be at least 15' high. at the surfing beach you cant even get in up to your knees w/out getting quickly sucked out to sea. there are other less dangerous beaches though. we rented boogie boards and i had the time of my life at the "normal" beach, which still have like 5' - 8' waves. ive ridden busses all over mexico, but the ride from oaxaca to escondido takes the cake. a 10 hour/100 mile trip - goes right though some pretty brutal mountainous areas and its a winding dirt road most of the way so the bus is going about 10-20 mph the whole time. its a tough ride, but quite an experience. the road goes so high up in the mountains that you are in the clouds, go through some really poor mountain villages w/ indians getting off and on w/ chickens and stuff, dirt roads that go along sheer cliffs that are hundreds of feet and landslides galore! good times!
if i had known what i was getting myself into we would have flown to escondido, but im glad i did it. i was kind of scared at the time though. buses rolling off cliffs in mexico are not uncommon.
my parents sad that turkey was one of the most beautiful places they've ever been... i want to go very badly. let me "borrow" my old man's amex and you can come along.
