i generally agree with you if we're talking the cold, boiled kind w/ mayo, although a good german potato salad, made with sour cream and bacon, can be pretty awesome. roasting is completely different, you can do the recipe with new potatoes, scrubbed, but leave the skin on. you can also crush a couple of cloves of garlic when you toss the unroasted potatoes with oil. the roasted whole cloves thou are very smooth, and very rich.
