gotta give some love to blacks in lockhart - my favorite place in town. not a fan of kreuz - not bad food, but my least favorite of the 3 in town - and the one time i went there i got yelled at by the old lady when i asked if they had bbq sauce - she was actually pretty pissed. that and the sterile atmosphere of the building itself - plus you already got blacks and smittys in town - better grub, friendlier staff and more history/character. blacks - got to get pork ribs...best ive ever had. their brisket is always great and the bbq is some of the best out there (im native texan and have lived in this state my whole life so dont give me any crap about being a sauce-loving yankee!)

When I cooked my brisket, my father-in-law smothered it in Sweet Baby Ray's sauce before he even tasted one bite. I almost jumped across the table and slapped the $hit out of him. When you're eating great brisket, you DO NOT use sauce! I don't blame that old lady one bit. Shame on you!
I know you don't need sauce for brisket.. but some of the sauce is great on it (a little, not drenched) franklin's expresso sauce snow's bbq sauce (wow it's good) salt lick ( i know.. heresy) have you been to Lambert's? I know it's non traditional and yuppie, but they have great mustard bbq sauce
Sauce is okay when you're eating normal, average, mediocre brisket. ..but you do NOT use sauce when eating great brisket. Nobody at Snow's or the places in Lockhart should be asking for sauce!
I'm all about steak by itself, but I want sauce with my brisket. Salt lick is my favorite. It's popular for a reason, it's friggin' good.
Lol. No sauce is a tradition at Kreuz - it's one o the traditions they list on a sign as you walk in. No wonder she wanted to haul off on you. :grin: I hear ya, though. I love sauces and rubs on BBQ - to me it's what gives it the distinctive flavor that separates it from other bbq's. It's also probably why we have distinctive regions of BBQ taste/flavor. It's probably why I thought Kreuz was good but not great. Either that or I went in on an average day.
That "no sauce on brisket" is a bunch of bs. I don't care how good you think your brisket is, my sauce will make it much tastier. But you no sauce wackadoodles keep on denying yourselves. Just more sauce for me.
Put me in the camp for no sauce on the brisket. Putting sauce on a good piece of meat is completely pointless IMO. Cant tell good from bad at that point. Brisket at Black is pretty good, but the sausage, pork, and ribs sucked ass.
Let's be clear about something here: For normal brisket you get from a standard restaurant, sauce is just fine, and frequently needed. When I go to the bbq places here in Houston, I use sauce all the time. What I think is being misunderstood here is... When you get great brisket, not only does it not need sauce, it shouldn't be eaten with sauce. This is because great brisket has so much flavor already in it, using sauce would only mask and conceal that great flavor. It's insulting to the cook, who has spent 10+ hours cooking that meat in a special way so that it would have so much flavor, only for you to mask it with sauce. Summary: normal brisket: feel free to use sauce great brisket: don't even think about it
droxford, I think you're overthinking things. Brisket, by definition, is a crappy piece of meat you just make tender. It's a horrible cut of beef. There's a reason why it's so damn cheap. We're not talking steak here. Go to any big time BBQ championships - tell me how many briskets win with nothing on them. They're all sauced or rubbed. Well, 99% of them, anyway. "No gravy for me on my mashed potatoes! You're hiding the taste of the potatoes!" "No icing on my cake! Real men eat cake with no frosting!!" Sauces are poured on all kinds of meat around the world (bearnaise sauce, demi-glace, chimichurri, etc.), but somehow "brisket cookers" have deemed it bad to put sauce on their cut of meat. MEAT SNOBS! :grin:
While I think the brisket there is the best I've ever had, I can't say I loved their sauce. It was ok, but nothing like some of the best sauces I've had.
Yeah, yeah, yeah. My brother's got the big egg smoker. He spends 10 hours cooking his brisket. It's the best brisket I've had. And it's still 10x better with my sauce on it. And that's why he always asks me to make a sauce when I'm over for a cook out.
Man, I'm gonna have to hunt you down or something with the way you talk about this sauce of yours. :grin:
What's your list of sauces DoD? I guess I've never had fantastic brisket because I always think a little extra sauce helps the flavor immensely. Now, if you're dousing it that's a different story, but I prefer mine with a little something extra.
The nicest (most interesting?) sauce I ever had was at Leo's BBQ in Oklahoma City. It's apple juice or apple cider based. I absolutely love this sauce. If you've got a sweet tooth, you can try something like Sweet Baby Ray's Honey bbq sauce or Bone Suckin' Sauce (hee hee) - both are really sweet, though. I wouldn't put either on beef - I usually don't like sweet sauces on beef. I actually like Stubb's Mesquite flavored sauce for beef. Sometimes I use apple cider vinegar in my sauce. My sauces are definitely on the sweet side and I think Baby Ray's is a solid commercial sauce.
