Texas BBQ

    I'm right down 35 in S.A....literally got on the phone and just made plans to try Franklin's this weekend. Judging from that video, the brisket looks EXCELLENT. I can't wait.

    I cooked the meat until its inner temperature was 187 degrees.

    I put the brisket on the grill at 8:45 am and served at about 6:20 pm. So, yeah, it came out to being about 1 hour per pound.

    I WILL be doing it again sometime. (Hopefully soon!)

    The only thing I struggled with was maintaining a consistent temperature in the smoker (while keeping a good quality of smoke). That was tough, but I think I have some ideas on how to do better (and lower maintenance) next time.

    I agree franklins is the best bbq i have ever had (never had snows though, gotta get around to that) but that host is the biggest f***** on earth


    In Houston Pierson's BBQ is the best I have tried

    I didn't try the ribs at Smitty's - just the gut and the brisket.

    i heard pork shoulder at snows was good has anyone tried it

    I love the pork loin at Snows. I actually just went there this past Saturday for the second time. I think the pork is their best item, then the chicken.

    Consistency seems to be an issue at Snows. The brisket was awesome the first time I went, but extremely dry on my second visit. It was so tough that I didn't even finish them. However, the pork ribs were divine this time though I thought they were just average the first time I went.

    If you look somewhere earlier in this thread (or maybe it was in another similar thread), I tried both Kreuz and Snow's for the first time on the same day. The brisket at Kreuz was good, but it was a letdown to me after I had heard such great things about it. It was also a big conveyor belt of people. I enjoyed eating at Snow's because the owners were so damn nice and the brisket was the best I've ever had. I still say they slap butter on their brisket. :)

    I tried the pork ribs at Snow's, not any other cuts. It was good, but nowhere near as good as their brisket and not the best ribs I've ever had. Any trip I take down there again, I'm definitely hitting up Snow's. I'm going to have to try Franklin next time as well.

    its not that good go to pierson's instead. I have also heard virgie's in houston is great is that true?

    Yea, I realize that. I've seen a lot of food shows so I've seen my fair share of over-the-top hosts, but there is a difference between over the top and a f*****. Bobby flay and Alton brown are enthusiastic hosts but they don't pull this kind of stuff

    Did you hear his description when he first ate the brisket???!!!!

    If you guys ever find yourself in Pearland, I highly recommend checking out Central Texas BBQ. I'm no BBQ connoisseur by any means (haven't been to any of these big named BBQ places mentioned in the thread), but I think it's pretty damn tasty and for a nice price.

    Bay Area as in SF Bay Area? Tougher to find stuff; folks there like Tony Romas and Armadillo Willys but if you are near Fremont Emil Villas used to be pretty good (especially good cole slaw).
