it's been a long time waiting but i'm going to smoke my first brisket of the summer on saturday. can't wait to sit around for hours just looking at the pit.

Not a fan of Bourdain. Made a name for himself by writing about how ****ty it is to work behind a kitchen. Write about doing lots of drugs and everybody thinks he is a food expert. I am jealous of him though. Would love to travel around the world eating stuff on TV.
Pretty much. Good gig if you can get it. Cooked a prime rib on the pit the other day...holy moly goodness.
Not sure why those are reasons to dislike a guy. He wrote an expose on the food industry; conceptually not very different than 'House of God' for medicine. People think he's a food expert because he's a food expert. He has intimate knowledge of the food industry and has been an executive chef at a successful restaurant. He's no Joel Robuchon, but he's sufficiently qualified to comment on food.
This...........then again, the seedier aspects of Kitchen Confidential matched my experiences of working in a kitchen back in my college days, so it really resonated with me. His personality and some of his traits are such that--on paper--I shouldn't like him at all. And yet I really do. Don't watch much TV, but when someone has that show on, I always find myself plopping down on the couch and watching it.........and usually really enjoying it. I'm glad the show is still going because I know a lot of people who could benefit from seeing just a little bit more of the world (not that they are the ones who are necessarily watching the show, but you never know........)
I'm no cook and don't have any great recipes, but his show alone has taught me a ton about other cultures and their food, so I'm not going to hate on the guy. I like his show. The other thing that I like is the fact some of the greatest chefs in the world like the guy. If he was some bum off the street spouting off, I don't think he'd get the time of day from them.

We get Midway here in Katy every once in a while and even though it's decent, it's nowhere near any of the usual suspects, especially it's brisket. But my goodness the other night we ordered the family pack when my parents were visiting and I had one slice of brisket that was just as good as Snow's.
