I'd love to put mine up against yours. I have no problem with Sweet Baby Ray's, but I reserve the sweet stuff for pork. For a brisket, I prefer my own sauce........the closest commercial sauce to it would be Stubb's spicey, but mine is far superior. I do agree that the best brisket doesn't need sauce. In fact, truly great brisket shouldn't be adorned with anything.........not even bread. But it so difficult to achieve. I've made dozens myself, but for every one I've made, I've made several more that could use some sauce. I've NEVER had any cue in Lockhart that couldn't have been improved with a decent sauce. I'm not saying they don't make great brisket; I'm just saying on the (many different) days I've been through there, the brisket was merely good. In fact, the only joint I've ever been to that had brisket that good was Snow's, and it may have just been the day I was there. I've never been able to achieve truly great brisket in my Big green egg............only in my offset smoker, and it is SUCH a labor of love. The temp must be maintained for hours on end, and all wood added to the firebox must be burned to coals outside of the smoker before being added. It's a lot of work. And yes, you do have to add a good rub; I don't think anyone is disputing that. But if you can babysit it well for 14 hours or so, you can make a brisket that doesn't need sauce.

I do eat brisket without sauce but it depends on the brisket have you been to Taylor ? Louie Mueller Barbecue is great! they do have 'sauce' but it's more of an au jous. the beef ribs are great. Also I heard the beef ribs are fantastic at Salt Lick you have to ask for them. the chipotle sausage at Mueller's is amazing.
Yes, they are. All the items "off menu" are great. Last time I was there we had a HUGE chunk of prime rib roast that blew minds. The beef ribs are crazy...as is the pork loin.
I'm in the great brisket doesn't need sauce camp. Louie Mueller's in Taylor doesn't need any that's for sure. Great pork ribs don't need sauce either. I need to make it to snows and may try franklins this weekend now that I'm in Austin.
Have you tried their sauce? it's really mild and light, it doesn't alter the flavor of the brisket. I'm heading down there on saturday before the game (Franklin's).

I had Franklin's for lunch today. I got there about 12:05 and there was about a 10 minute wait. By the time I got up there the only thing left was brisket. I got the lean variety and it was awesome. Probably the best bbq brisket I have ever had. Very moist and full of flavor. Got a side of the espresso sauce and the thin vinegary sauce as well.
Snow's is only open on Saturdays from 8am (?) until the meat runs out. They usually run out by 10am-noon from what I understand. I got there before 7am and they had a line by 8-8:20am. Go out back and chat with the owners. Tootsie, the pit boss, is a sweet ol' lady.
A group of my buddies went to Franklin today (I couldn't go 'cause I'm stuck home with a sick kid). They arrived at 10:30am and there was a LONG line. By the time they were done with their lunch, the proprietors were already closing the gate. All of them are BBQ/brisket snobs and 100% of them gave the brisket a 10/10. The ribs got an overall rating of "well above average." The pulled pork got rated as "great," but not NC quality (as I've always believed as well). Get there REALLY early if you're going on a weekend.
that's so freaking early on a saturday and I don't know anyone who lives close to Lexington TX. I do want to make the journey at some point though.
meh. He hasn't reviewed Gator Junction in Wallisville. I did agree with a few of his reviews though. Disagreed with a few as well. anyway...Gator Junction is the absolute best. I moved from the heights to cypress about 5 years ago. Then moved to Austin this summer after getting laid off. I figured if I was going to be broke and homeless I should do it some place I've always wanted to be. May have also saved my marriage and now my family is on the rebound.
?? Rudy's has always been consistent, especially if you order the 'moist' brisket. It's not the best but it's still pretty good for a chain. It's definitely better than Luther's in Houston (do they still have that?). When I was in Htown my coworkers loved going there.
