Al Pastor is just one of those things I've never tried to do at home, like gyro. It's doable on a grill but.... That looks delicious though, and gives me ideas. eta: the Mom marinated fajitas the other night with this recipe and invited me over to grill them (I know, Paula Deen, but still), it's simple but straight-up legit tasty. Very close to the flavor of the good Houston fajitas. Gonna try al pastor in the coming weekends. Best tacos I've ever had was at El Fogon (out of the tourist district) in Playa Del Carmen. About $.85 a taco, too.
I'm a big fan of the Cuban tacos at El Rey. beef...black beans...plantains. The 1810 taco at Luchi & Joey's is another favorite.
