    If you're cooking on charcoal and the lid is down, then the fire doesn't flare up, because there isn't any oxygen getting to the fire. I'm not sure about a gas grill, since I've never cooked on one before...

    I prefer to cook steaks and burgers with the lid up and get a good char on the outside. If the fire flares up too much, I just squirt it with some water in a squirt bottle.

    I've read many good things about charcoal grill on this BBS, but I only have a gas grill since I am not a patient guy when it comes to preparing the heating source. :(

    I've always used the same seasoning, just basic lemon pepper on a hot grill, flip twice, medium rare in the middle

    It's a matter of taste, but I've had some really good steaks with just salt and pepper. I'd still rather a mediocre steak with a good marinade.

    to me, firing up the charcoal is part of the fun. it's like after a hard day's work and coming home to that first beer.

    Yeah like Pole said, the better steaks will have much higher marbling throughout and void of pockets of fat inside or stings of fat on the outside ..

    I love me some steak. I can't say the same for my wife. Is it just me or do most women not like steak?

    I prefer a little bit more marinade, but minimal (salt/pepper/garlic) is good as well and gives you a more natural flavor.

    In a small bowl, I mix Tony Chachere's (sp?), salt, pepper, garlic powder and Omaha Steaks Seasoning. Equal amounts, but a bit lighter on the salt/pepper.

    In another small bowl, I use a mixture of worchestshire sauce and a mesquite flavored marinade sauce. Stir toghether.

    I cover the steaks with the sauce and then use the seasoning mix on top of that, rubbing in the seasonings into the meat.

    Cover for one evening in the fridge and you are good to go. A bit of butter while grilling helps as well.


    As others said, choice of meat is huge. I suggest Pete's Fine Meats or Whole Foods. (HEB is good as well...not a Costco member)

    Charcoal is the only way to go. My marinade consists of a blend of spices with water, vinegar, and italian dressing. Ribeye on the cut. The key to finding a good ribeye is looking for a cut with the biggest marbling section to it (the outside edge of the cut).

    As for adding butter to a steak, I have done that with a filet. I grilled it first, then added the butter and a bit of salt and let it sear in the oven for a few minutes. One of the best tasting fillets I have ever cooked. I didn't even need a steak knife to cut it.

    Why would one add butter to a steak after cooking? Don't think I've heard that before.

    I've seen people cook their steak then wrap it in tinfoil with a pad of butter on each side of the steak for a couple of minutes.

    Derek and I were joking around the other day that if we were rich, we'd eat porterhouses for dinner every day. (of course we'd probably die at 30)...

    i've never had home-cooked steak, because my dad doesn't eat beef or pork and my sister's a vegetarian. But three steaks from restaurants i really remember were Friday's, Saltgrass, and the most amazing one ever, Taste of Texas. This topic really makes me want to cook some steaks though.

    I'm seeing this girl right now thats smokin hot and she can't stand steak and I absolutely love it more than anything. Whenever we go to dinner I pretend like I don't like steak and order something else. Yes, yes I know .......... :(

    No kidding. I looked at the three she posted and said to myself "What? No Sizzler?"

    You need to go to Vic & Anthony's or Pappa's Bros. or Ruth's Chris. Or several of actual steakhouses in Houston.

    I love V&A. Not only are their steaks fantastic but their crab cakes may be the best I've ever had.

    edit: I know you don't get up our way often but Kirby's is pretty damn good too. Something you probably wouldn't think about, but their mashed potatoes are just ridiculous, just absolutely amazing.

    Didn't order it, but I got a package of Omaha Steaks as a gift once. A variety of cuts including Ribeye, NY Strip, and filet mignon. And I must admit, they were the best home-cooked steaks I've ever tasted.
