Someone trespassing in my backyard

Sorry to hear about that, but I'm glad it's not a problem for you anymore. My neighbors typically keep to themselves, but tonight I'll talk to them about it.

Why don't you put up a no trespassing sign and a lock...

OR get electric fence stuff and wrap it around the latch, that would be fun.

No, unless its a child and you have something that would attract a child (a cute puppy for example) or a trampoline or a pool. If you have nothing that will attract children, u should be able to totally get away with it.

I'm fine w/ people leaving my yard door open, but this is borderline destroying my property. Nothing is missing from my yard, my dog is still safe, and no note was left for me on why the individual needed access to my backyard so bad that they need to break the metal latch.

I don't think this is worth noting the police for. What should I do? I was thinking about getting a surveillance camera installed, but I thought my neighborhood was better than that.

Or am I just paranoid/overreacting?

Good, stick to Business law because you are WRONG on this point regarding torts. Spring guns and traps are illegal and you will be sued if someone gets hurt and you will lose.
