Places for chefs to shop for ingredients?

    As some of you know, I have a foodtruck called TexasFudge out here in west Texas. I have a dear friend visiting Houston who is looking for places to buy ingredients such as duck breast and caviar. What are some of the restaurant supply stores there in Houston? Any help is greatly appreciated!

    Central Market and perhaps Whole Foods would sell both. Not sure it'd be in quantities your friend is looking for.

    Not much wild caviars around here but I do have 4 ducks in the freezer

    That was my next question, is the "how much, how often?"

    In Houston, Spec's Downtown has all sorts of caviar and other such things, I would also look online.

    As far as duck breast...I'd google "texas duck farm" and find a place, talk to them, then either visit there or get it shipped to you.

    As was mentioned, if you're just buying a little, you can't go wrong with Central Market and Whole Foods. My brother, former chef, loves buying proteins at Central Market, at least the one near him in N-Central Austin. He likes it better than Whole Foods, for whatever that's worth.
