Impeachment is really whatever a majority of the House thinks is impeachable. If McCarthy can actually get a majority to agree to impeach Joe Biden for Hunter Biden’s activities they can. Unless something really major breaks through I doubt they has any chance in the Senate. Conviction from office is a very high bar and even with Jan. 6th where 7 Republican Senators voted for conviction that was still short. More risky thought for Republicans is impeaching Joe Biden for Hunter Biden carries a substantial political risk. As we saw with the impeachment of Bill Clinton that led to Democrats getting more house seats in the 1998 election.
