He's talking about the characters. If we go by your definition, there hasn't been a single authentic movie ever... even those 'Based on a True Story' ones.
Probably just a more grounded premise and setting in those first two, along with Jackie Brown they all used retro culture and criminality to reinforce themes about adult inertia and deflated ambition. He probably hit a fork in the road then and realized studios would develop genre-bending in earnest, so then he started doing feature length period satire.
