[Mexican food] what's the difference between barbacoa and machaca?

    Barbacoa is soft, cow head meat... at least from what I know.

    Machaca is... dang it, I thought you meant "machacado" which is a drier, less tender meat from cow.

    This is as far as I know. :eek: There might be recipes that say the contrary. Try both. One is harder (that's what COWS said) to chew.

    My pick goes to BARBACOA. Get it on Sundays at Matamoros or La Michoacana.

    Machaca is more common in breakfast, I think. Machaca with eggs is pretty popular.

    But you can have barbacoa as breakfast if you are getting breakfast tacos.

    Personally I love barbacoa, not a big fan of machaca.

    Deshebrada.

    Deshebrada. is the way to go. No fat or weird eyeballs like in some barbacoa. Just lean shredded brisket

    For breakfast...machacado, which is shredded skirt steak mixed in with eggs, jalapenos, tomatoes, onion, etc.

    barbacoa is better for lunch and tastes better. Also, barbacoa is head meat which is what Swoly likes! ;)

    I'm pretty sure Taco Cabana has barbacoa 7 days a week. :)

    I love barbacoa...

    And taco cabana's barbacoa (or whatever it is that they claim is barbacoa) is surprisingly f$%king delicious. A little cilantro on there and it isn't a bad option when you need some fast food.
