If your grilling then the meat is directly over the fire. Smoking is called just that because the smoke not only flavors the meat but the heat from the smoke also cooks the meat and that is why the meat is not directly over the fire when you smoke.
Have you or anybody else had any experience with mixing different woods together like say pecan and mesquite?
I tried it a couple of times but did not like the results. The first I mixed mesquite and pecan. The second time I added apple with those two. I only did this because I was running short on wood. LOL. I just did not like the flavor of combined woods over a single type.
I've mixed apple and cherry when smoking fish, but that's it. If you are going to mix wood, stick with light wood like fruit tree wood. Mesquite overpowers all other wood so I wouldn't mix it with anything.
Exactly. The two times I mixed, both were with mesquite. I find mesquite and hickory the most powerful woods in terms of smoking and that might be why you can find them more abundantly then the other types of woods. Even though pecan is actually a type of hickory, I have found it along with apple as my two favorites to smoke with.
