Never boiled crawfish but am eager to try. Do any of y'all use beer to boil them? I've seen that done with crab.
That makes sense to me since I have boiled crab and lobster and that would be the case. The exception would be if you chop up the crustaceans and then stir fry them in seasonings after boiling.
Saw some videos where some drunks cooking crawfish pour it into the boil, but I don't know if it adds any culinary value.
I use beer often in cooking for marinating and in stews. The alcohol and other flavors add depth to the food.
Boiling anything in unseasoned water leeches the flavor. So unless you're making a broth, adding at least a little salt prevents this.
Use it when I'm smoking a chicken and you are right it definitely brings a unique flavor to it. Just never tried it in a boil. Maybe I'll toss in a some next time and see.
Like I said I have never boiled Crawfish and probably won't be for a long time since I live in Minnesota but let me know how it turns out.
out of curiosity, are you saying that boiling them in seasoned stock makes them taste worse? i'd guess to a cajun, your method would be akin to beans in chili.
he probably meant season after the water comes to a boil... not after the stove is turned off and is no longer boiling

I've never seen them at local grocery stores here in Oregon and my co-worker said he's having a crawfish boil fundraiser this weekend so I asked him where he gets them. He said his wife knows a guy that goes out ans catches them and they're live and crawling. So I guess they're still in season? I've never made it before... but the picture on page 2 made me drool just a little and now I must try. Picking up 10 pounds tomorrow.... and the price is $3 per pound. Is that average?
