Well, to explain that scene, you have to know the background of it. I'll just say before using the spoiler tags, that the scene depicts a nurse getting an unfortunate ending. Spoiler The movie is based off William Peter Blatty's novel, "Legion", and really has nothing to do with the first Exorcist movie. The movie studio did not want to call the movie, "Legion" and insisted in having the "Exorcist" name in it. This caused the author of the novel, Blatty, who also wrote the screenplay and directed to do a major re-write of the screenplay by having to add an exorcism near the end of the movie. But other than that, the movie pretty much faithfully follows the novel. In the story, the soul of the Gemini Killer (who is loosely based on the Zodiac Killer) occupies the physical body of a man who is known as "Patient X" but is in reality, Father Damian Karras from the first Exorcist movie. The cop Kinderman played by George C. Scott is investigating a series of murders that appear to be committed by one serial killer but yet the fingerprints do not match any of the crime scenes thus implying that different people are committing the murders. It is soon revealed that the soul of the Gemini Killer is possessing the elderly, dementia patients at the hospital and using them to kill. In the scene that I posted, the Gemini has possessed one of the patients who decides to use a sheet to conceal themselves and then goes after the nurse with surgical shears to decapitate her. So, in other words, you are witnessing one of his murders committed firsthand. It is such a memorable scene because it produces a great "jump" moment.
I think the best scene in jaws is in when that guy tells the story of the USS Indianapolis... it's scary in a more subtle way i guess.
