I too have that CIA book...or an earlier version. Have several I just like to read, including some historical ones....sauces, stocks, etc. I'm also big on Joy of Cooking, too. But I don't buy cookbooks anymore for recipes. Definitely no longer buy specific cuisines. Sorta like why I stopped buying cooking utensils. Had enough already, and a bad habit of liking to buy more. Had Cook's Illustrated for quite awhile, but not that big of a fan anymore...story for another thread....I think they steal from JoC without giving credit. anyhoot, partly because I have too many, and partly because the Internet and Youtube are so rich with sources now. And like you said, I'm mainly looking for ideas...not really recipes to follow per se.
