    Own invention after coming back from Belize.

    Caribbean Coconut (Fish, Chicken, or Shrimp) Curry

    Saute some diced white onions
    Throw in some diced garlic
    Throw in some kind of pepper (bell, jalapeno, serrano, whatever)
    Sprinkle some kind of Caribbean curry powder or Indian if you want
    Toss in the protein
    Keep sauteing
    Thrown in some coconut milk, but not too much
    Sprinkle liberally with salt
    Bring to a boil, cover and let simmer

    Fish and shrimp of course cook very quickly, chicken takes approximately 10-12 min for breast meat

    Make a slurry with some cornstarch, toss it in, simmer for a couple more minutes, sprinkle some cilantro and pretend you are on an island.

    Easy rice and fish recipe

    Put some rice in a rice cooker
    put a fish filet in the rice cooker on top of the rice
    Put some greens in there if you want, do some seasoning
    turn on the rice cooker

    That's literally all. It takes 2 mins of prep and you end up with a healthy meal, you don't even have to serve it on another plate, just eat it straight from the bowl. Dinner in 12 minutes and minimal cleaning afterwards.

    Drive to McDonald's order Big Mac or 1/4 pounder and a filet o fish.
    Bring it home. Remove 1 bun from either sandwhich and stack on top of each other.
    Easy surf and turf action for 5 bucks.

    Very simple entree (sure to impress)

    Ingredients:
    chorizo sausage (cut into 1 inch lengths)
    scallops (out of shells and trimmed)
    lemon
    parsley (a bunch, roughly chopped)

    Method:
    1. dry fry the chorizo rounds in a pan over medium - high heat (ie, no oil). The oil from the chorizo will come out and coat the pan. Be sure to cook both sides of the chorizo, then remove from pan and set aside.
    2. Put the scallops into the pan and cook. The oil that came out of the chorizo will prevent them from sticking to the pan. DO NOT overcook the scallop (ie, about a minute each side - possibly less)
    3. Return chorizo to the pan, squeeze in the juice from a lemon, mix through the parsley. Then put it all on a platter to serve.

    For mega bonus points, get some of the scallop shells and serve the chorizo round on the shell with a scallop on top and a smattering of parsley leaves over the top.

    So good, so easy.

    Simple Baked Chicken and Bacon

    Boneless chicken breasts seasoned to taste (I use a cajun spice like Tony's but sometimes I mix it up with garlic and herb or something like that)

    Cover fully with thick cut bacon

    Bake @ 400 for 30-40 mins depending on how big the chicken breasts are. Bacon will be done at same time as chicken and serves to keep chicken moist.

    (Asian Variation) Season chicken with Ginger and All Spice. Last 5-10 mins of cook time brush with mixture of honey and sriracha. Yields a sticky sweet, spicy chicken and bacon.

    Cohete's spicy jambalaya.

    Ingredients

    1. Tofu
    2. Vegetables
    3. 1/2 cup olive oil
    4. 1 cup Jasmine rice
    5. 6 oz tomato paste
    6. 9 oz water
    7. Spice mix (see below)

    Spice _______| Teaspoons
    Corriander ....| 1
    Cardamom ....| 1
    Nutmeg ........| 0.5
    Cinnamon .....| 1
    Black Pepper .| 1
    Cayenne .......| 0.5
    Cloves ..........| 1
    Salt .............| 1.5

    Steps
    1. Saute vegetables and tofu (add half of spice mix during saute)
    2. Add 6 oz tomato paste
    3. Add 9 oz water as tomato paste added
    4. Mix tomato paste and water
    5. Add remaining half of spice mix
    6. Let simmer for amount of time it takes to cook 1 cup of rice (cook the rice)
    7. Serve

    Pappasito's fajita recipe:

    Half Soy Sauce
    Half Pineapple Juice
    Squeeze some limes
    Marinate beef or chicken in the mixture over night.

    Grill.

    Eat.
