Nope......andouille is really good smoked sausage; smoked over pecan wood in fact. Of course, I was kidding about picking me some up, but if you find yourself with some extra time, I definitely recommend getting yourself some. The two places in La Place (they're basically next door to each other.....Jacob's and Bailey's) make theirs so that they are fully cooked. It's like cajun summer sausage............or you can cook with it.
