Gunsmoke - not sure of the episode name but its one of the last. Its the end of the cattle drives and the train is taking over. Which also can be looked at as the end of the wild west.

    The Rifleman - Waste

Not a fact. They knew he was being killed off. They just didn't know they were filming the scene when they came in....from Jamie Farr

[T]he last episode of the third year … when we read the [script] page and found out that Henry died, we were all stunned, and Larry [Gelbart] asked for comments and a lot of people had their say. But I didn’t say anything because I didn’t think they would really care what I had to say. I happened to agree with doing it, but I didn’t say a word.

The whole thing about Henry’s death was very hush-hush. I had already finished my scenes and was at home waiting for a call about the [end of season] wrap party. Loretta [Swit] was finished also. Then I got a call from the studio asking me to come in for an added scene, and they said Loretta was coming, too. I asked if I needed the pages ahead of time — if I had to study any lines — and they said no, not to worry, it was a quick scene in the OR and just to come on in. I said fine. I came down and they called all the regulars into a corner and Larry had a big manila envelope and he pulled out these [script] pages. We couldn’t believe what we had read. We blocked it without saying a word so the crew wouldn’t know anything until we actually did it.

Loved Longstreet. It came out when TV went through a whole slew of different PIs with gimmicks... Ironsides (wheel chair), Mannix (always getting knocked out), Cannon (fat guy), Columbo (one-eyed guy with wrinkly trench coat), Kojak (bald guy with lollipop), Barnaby Jones (old guy), Murder She Wrote (old woman), Magnum PI (ferrari guy with Hawaiian shirts), Longstreet (blind guy).

I Love Lucy. Hard to pick one episode since so many were LOL funny. But either "working at the chocolate factory" or "Vita Vita Vegamin" episodes were so funny.

If know one thing from playing trivia with friends, it's that I don't know that much about the history of great TV shows.

That said, there's a high probability the greatest single episode of TV ever is in one of the first 8 seasons of The Simpsons, whatever it is. Despite it living several lifetimes longer than it should have and turning into an unrecognizable mess, it's hard to argue against the golden age of The Simpsons regardless of time period.
