Wait if you give someone a $3k amex gift card, its not taxable? I'd be shocked. I mean as an owner, you'd want to claim the deduction, so I would assume the employee has to pay income tax on it...
Just make sure the cash bonus - taxes = $3,000 or you will end up with egg on your face. I've seen if before. People will count on getting the exact amount you told them they will get.
