hard boiled is the cleanest and easiest, but when I cook eggs I also prefer a Fried Egg Sunny Side Up...

Fried, over medium. Preferably huevos rancheros. These are from Las Manitas in Austin. Fabulous. Great tortillas, fresh squeezed orange juice, a side of fresh fruit and, if I'm really hungry, a side of rice.

Damn, I'm hungry... brunch time! (has Las Manitas reopened yet?)

Another good combination..... Shin Ramyun with an egg dropped in at the end so it's nice and poached.

For flavor, I'd choose sunny side up with salt and pepper.

However, I never eat it that way (health concerns)

I usually cook them as follows:

scramble 6 egg whites with 1 egg yolk, with three drops of yellow food coloring. Pour this into to circular egg molds. Cook and eat during the week with jalapenos and picante.

And I sometimes treat myself to a delicious Whataburger Breakfast-on-a-bun Ranchero. Mmm mmmm.

 Is that supposed to somehow trick your mind into thinking there's more yolk? You mention health concerns yet you're gonna pour some artificial food coloring. Some people do the weirdest **** I swear.

When I make them, fried. At a restaurant, scrambled. I never like the way my scrambled eggs come out when I try to make them.

Is this Century Egg the same as the 1,000 year old egg?

    Listen up here, hombre....

I don't know if you've noticed, but there's more to enjoying a meal than just how it tastes. Aroma, Texture, and visuals also play an important part. I prefer eggs that have a natural color to them. And when there's so little yolk in that mixture, they just don't have enough yellow color in them to make them look natural.

Now, to address the health concerns of three drops of food color (which has no carbs, no calories, no fat... nothing at all really)... Do you really think that three drops of that are worse for your health than an egg yolk??

    No? Yo no lo creo.

Over easy is cooked on both sides while sunny side up is cooked on only 1 side. Fried eggs is just a general term while over easy and sunny side up are both specific terms.

All are versions of fried. Sunny side up you don't flip, also generally the runniest yolk. Over easy you flip (hence over) but still have runny yolk. There is also over medium and over hard which have progressively firmer yolks.

Adding artificial food coloring to appear more natural... genius.
