Prince Paul is my favorite...the first De la Soul album (and to a slightly lesser extent the next two) were just masterpiece of production, and basically put everyone else doing sampling at the time to shame. Then more recently Prince of Thieves is one of the most underrated rap albums ever.
I had to break it down into genres...the job changes dramatically depending on the style. Hip-Hop Favorite Producer: Jay Dee aka J Dilla, RIP Favorite Song: Pharcyde - Runnin' (Hey, I enjoy any Stan Getz sample) Other Songs we may know: He's done stuff for The Pharcyde, Tribe Called Quest, Black Star, Common, De La Soul, etc. RZA's a close second though. DJ Premier is by far my favorite producer, and he's from Houston. I have no idea how he found some of the songs he's used. Case in point, the sample he used for "Represent" from Illmatic came from a movie called the Thief of Baghdad made in either 1924 or 1940, theres two of them so I'm not sure.

Its not them, their very creative and have made great stuff for people all over the world but people come to them and say "I want my ish to sound like this" and they do it. How could you turn down millions of dollars even if it means making a lame beat with just congos and tambourines? Put it this way, the stuff that sounds good is all them. As a guy who has so many family members still tryin' to make it and knows others who work in music it is blasphemous for there to be a thread about producers that has no mention of Timbaland and very little of the Neptunes. Neptunes, Timbaland and Dre are no brainers to me.
Quincy Jones ftw!!! Some other hip hop guys who are top notch but don't get enough props. Producer:Rick Rubin Song: Paul Revere, walk this way remix, 99 problems, mostly early Def Jam stuff One of the main reasons for Hip Hop becoming mainstream Producer: Mannie Fresh Song: anything from earlier Cash Money VERY underrated outside of the south. I like listening to alot of the older songs where he used old 007 melodies, not the new stuff where he uses the same beat over and over (money). Producer: DJ Quick Song: any of his albums Despite looking like a full blown homosexual on some of his album covers his smooth jazz like beats are kinda addictive
Steve Lillywhite - He's a master at getting great drum parts and sounds. My favorite song that shows off his production probably Porrohman from the album The Crossing by Big Country. But he also produced U2's three best albums - Boy, War, October, and some of Joshua Tree. He produced Drums and Wires, and Black Sea from XTC He's also produced Johnny Thunders which really rocks. He produced two Pogues albums Also recently he produced a Guster album as well as some other stuff from some artists I don't really like that much. I know some people like Dave Mathews Band, and he did several of their albums. Other great producers include Brian Eno who produced Talking Heads, Devo, and many others. As Well as Nick Lowe who's worked with The Damned, Elvis Costello, and Squeeze.
