Ya'll forgot to mention Ludwig's Leonore Overture #3. Based on what you like Chance, you'll love that one. (Must be listened to loudly like the last movement of Ode to Joy) Since you like Canon, you should check out Vivaldi and Albinoni. Like Manny, I like the Brandenburg Concertos. Some of Handel's Water Music ain't bad either.
Er rimmy and NIKEstrad: I am aware that the picks I made were mainly baroque and classical composers, but I doubt Chance is going to like Bruckner, Mahler, Shostakovich, Stravinsky, etc. on the first listen compared to Bach, Handel, Mozart, Beethoven, etc. But, hey, I could be wrong....

C'mon, classical music is music without lyrics that is made by people in tuxes. Try "Adaagio for Strings" by Samuel Barber.
My humble addition to this thread would be the suggestion to listen to anything by Camil St. Seans or Bela Bartok. Also, there's a very nice classical midi archive at www.classicalarchives.com that actually sounds decent if you download one of those 100mb soundfont libraries. It's a good place to put a name to a tune that you might have heard.

Either John Petrucci or Yngwie Malmsteen did a real cool version of "Air on the G String." Steve Vai does a very nice Beethoven's... 5th? I think it's 5th. Real cool.
How about Largo from Xerxes by Handel? Of course there are the Straus waltzes, and ballet themes. There is a lot of beautiful piano music, without full orchestra. Chopin, Lizst, Debussey, and more. Not a Mahler fan.
John Petrucci is GOD!!! He also did a freaking awesome guitar version of Flight of the Bumblebees. What's that, you say? It's impossible to play Flight of the Bumblebees on the guitar? Tell that to John.
Bach Around The Clock is their catch phrase. In case some of you are not aware of it, there is FM92.1 in Houston that plays classical music 24/7. Here is their website KRTS with a list of there program schedule. I listen to it every night, even though I have no culture. Now, if we have a 24/7 Jazz station in Houston as well, then I would be in Heaven.
