Houston Chinese food is generally southern cuisine. The Chinese restaurants are usually Canton/HK style that seems to get the reputation from the west as freaky. And I've definitely tried them in both Houston and Hong Kong. I still don't see the differences. Maybe it's just that I'm simply not picky with food. So I don't go "OMG Gross what is this stuff!" on meat that's not clearly pork/chicken/beef. A lot of the times, when I really think about it, it's not even the food itself. It's just the presentation. For example, fish and shrimp in China are usually served whole with the creepy heads, tails, or other parts intact. It does leave an impression for Americans like myself used to seeing our food devoid of animal characteristics. But that hardly means much. Really, the only thing you can pin Asians on in terms of food is dog meat. But ironically, I've been told that dog meat is considered "low level cuisine" in China.
