    TXLC Smoked Sirloin Nachos
Tender smoked sirloin, refried beans, jalapenos and melted Cheddar Jack cheese

They're old school nachos, with real grated cheese melted under a broiler. I think they might come with a side of sour cream and guac. Great appetizer, though I prefer the onion strings.

Chuy's, or Ninfa's. I like the individual ones with the fajita meat on them.

Heh. I'm not exactly sure. Goat, Steak, Chicken...I think I found a shrimp in there, once.

And yeah...the King Kong are at least a four man job. But all that grease and cheese is the greatest food in the world at 3am after a night out drinking. :D

Yeah, they do. I don't think they're the ones with the King Kong nachos, at least I've never noticed them on the menu.

I just went there for the first time tonight. It was pretty good. I wish I would have seen this earlier so I could have tried the nachos.

Who's got a good Nachos recipe?

Like is it better to use chedder or monterey jack?

    Melted cheese or cheese sauce?

Damn, this thread is making me hungry.

If you like it spicy, use the hot Rotel with Mexican Hot Velveeta. Damn, I might have to go buy some now...

Velveeta and Rotel is old news. Try adding chorizo sausage into the velveeta and rotel.

    Freaking awesome.

    Here's the best Nacho recipe:

    What you'll need:

    pack of yellow corn tortillas
    bottle of cooking oil
    shreddedVelveeta
    shredded Cheddar
Refried Beans (preferably homemade or get some to go from a good Mexican place)
    Cooked beef fajitas chopped
    guacamole
    jalapenos

    What you'll do:

Cut the stack of corn tortillas into 1/4's
    fry tortillas in oil
    spread refried beans on chips
sprinkle equal parts Velveeta and cheddar all over
    cover with chopped fajitas
put in oven on broil (top rack) and let cook until cheese is melted
take out of oven and spread guacamole and jalapenos on top

    Done
