Agree with you there. Why not just grind up a really fatty piece of chuck? With something like a burger, to me it's really just the fat content that counts. Sometimes it's nice to get kind of a game-y flavor, so you can go for grass-fed or something. I've read that In-N-Out burgers are made using ground beef with 40% fat content. No wonder they're crack.
christian's Lankford Pappa's and Bubba's for the buffalo burger Seems to be somewhat of a consensus to some extent, but those are probably my favorites.
I was high on 5 Guys until I ate one at the Rosenberg 59 location that tasted no better than a burger from Wendy's. Very disappointing. I've moved to Smashburger. Love their buns and Smash fries. I also like Tornado burger in Stafford.
Princes has some of the crappiest food I've ever had. I went a few times because a friends brother worked there and it was just awful, it's like a really bad Fudruckers. I agree with everyone about Bubbas, my only beef with them is that they don't serve fries... wtf Bubbas?

+1 on Smashburger and Tornado. Easily my two favorite burger joints in Houston, very flavorful. Smashburger particularly is incredibly well seasoned and prepared. If you've never had them before, make sure to try the Smashfries as well when you go. Easily the best fries in Houston. You know you're eating good food when you can easily wolf everything down without even looking at condiments. Those fries don't need ketchup.
Smashburger has a good burger but I'm not a fan of the Smashfries at all, way too much rosemary IMO. Never tried a burger from Tornado but their spicy philly cheesesteak is really good, easily the best cheesesteak I've had in Houston.
smashburger does have good burgers...love how they use raw jalapenos. Their Chicago style dog is also money. That's what i usually order. Their smashfries are really good but i can see how the rosemary may turn some people off. I tried 5 guys for the first time last week. It's a burger and not bad but didnt live up to the hype. The cajun fries, however, were awesome.
The Kobe burger at Max's Wine Dive is great - it's topped with brie and is delish. As is their "haute" dog. "Strube Ranch Wagyu beef hot dog on a Slow Dough Bread Co. baguette served with fried onion strings and MAX’s famous frites in your choice of style: Texas Style: chili, jalapeños and cotija cheese NY Style: beer-braised sauerkraut, Dijon mustard and pickles" Yes please. And their fries are money.
Another vote for smashburgers and tornado. And after visiting 5GBF a couple of times, I hardly go back; nonplussed.
There is a Smash burger on Louetta right down my house, I think i will go try that today. I tried 5 guys once, all I remember was the extreme greasiness...but it was okay...
