mmm i'm stuck with hickory, can't find pecan anywhere, except in a pie, will have to smuggle some back in, in the suitcase next time.
You can grill with mesquite or just about anything, but when you are smoke-roasting meat, nothing beats pecan. It adds this sweet flavor that no other wood can match.
I enjoy the foods & restaurants in Adelaide quite alot... no need to mention living expenses are much cheaper than Sydney & Melbourne... you are a lucky man Smeg!

Joy of Cooking is probably the most-sold cookbook ever...it has ever basic recipe pretty much ever worth writing about. I look at it first, before looking at other books.. It's the white book with "Joy" in big read letters. Surely it has made it down under. anyhow, if you can't find it, just search for brined turkey and use that. so, what kind of wood do you have down there?

As some who has had Behad's ribs and brisket, i can say they are unbucking believable. (Although my ribs yesterday were also damn good) The brisket is just amazing, and when you see how much work, effort, and attention he puts into it is understandable. I have only one suggestion Mango, play your cards right and get yourself an invitation to some sort of Behad function that Brisket is on the menu for. Although you will have to pass the Mrs Behad quality control personality test first
