ribs are usually at their best when you boil them before you throw them on the grill. You can boil them with pepper, garlic powder, salt, etc. in the water and let them stay on a rolling boil for about an hour.

Also, Rocket2K was very right about the lighter fluid thing. Let it burn off before you cook on the heat. Otherwise, all of your food will taste like lighter fluid.

thanks Don, Behad did suggest this as a method to remove the fat, however i didn't do it as it they looked like they didn't have much fat on them, as far as i could tell with limited rib inspection experience, next time i will boil.

Behad - btw i stunk after that and so does hafl the back of the house

but it's a good stink, right Smeggy. My dog loves me when I bbq.

it's weird how I read Behad's posts with his voice in my head, now.

    "you just can't."

especially love the smell after you have been doing some major smoking...mesquite or hickory...the smell gets on you and I swear I still smell it for a couple of days afterwards.

    Smeg,
It doesnt really matter if there is alot of fat or not, boiling will also help the meat to fall off the bone after you cook it..
or so I am told...I havent done ribs since I was told that, so I cant confirm if it's true.

Behad - gonna make another attempt this weekend, with less time contraints and also less ribs on the webber.

quick question - how can i degrade the spiciness of my rub, besides putting less on???

That depends on what spices you are using. If one spice is standing out above the others, use less of it. It the combination is right, but just too strong, use less to start with. You don't need to entirely cover the meat. A thin layer will work.

Also add in Honey as part of the rub....it helps curb spiciness and adds loads of flavor.

My wife has become addicted to rubbing Grub Rub on all of our meats. She also likes to use Hawaiian salt.
