Everytime I see a pho thread, I wonder how many people reading it are pronouncing it "foe" in their minds.
I eat at the Pho Binh on Mangum by Delmar Stadium at least once a week. I also like Pho Huynh on Milam, across from Van Loc.
The way most places and my family makes pho is with beef bones. All of the meat in the pho is usually beef or chicken. I think the stuff you're thinking of is another vietnamese dish called Hu Tieu which uses a pork base and pork meat. I'm too lazy to ask my family or look it up right now . All in all, you should be safe to eat pho.
Make that 3 Vietnamese joints in Hell's Kitchen with subpar Pho. Delivery didnt provide the purple sauce / red sauce combo and only gave me one freaking sprig.
I think on Friday, Emeril did a show on Vietnamese food. Though he doesn't do much research. He made a Vietnamese sandwhich using meatballs, but he said something like "I think the Vietnamese were inspired when they came here to New Orleans and made their own kind of PoBoy," or something like that. I didn't see it all but from what I gather, his knowledge of Vietnamese food is from a reastaurant there in NO. My mom is a big fan and said that it's surprising he doesn't have his facts straight because he has a chef working for him who is Vietnamese. Anyways, what I saw, he made spring rolls, but instead of the paper thin pork, he used pork loin. I'd like to try that. He also made a vermicilli bowl with those meatballs, but I didn't see what he put in them. Man, I'm starting to get hungry. Speaking of Vietnamese Food, anybody living in my part of town, what do you think of the new big ass Lee's Sandwhiches on Boone and Bellaire? That place was packed early on and I haven't gone but I think it's died down now. I looked it up and it turns out it's a chain coming out of California.
