I really liked Meet Joe Black. Brad and Claire is cute together. Also am I the only one who really liked The Truth About Charlie? I didn't know The Wickerman was a remake, but I did like the twist in the end.
The only one that I would add to the list would be the remake of Manhunter. Red Dragon was good, but I just feel it pails in comparison. MH was just amazing. It still gives me chills thinking back to the screaming man on fire wheeling down the car garage. I'll admit that I'm a big fan of Ed Norton, which really makes it hard to say that I didn't like Red Dragon. The first movie was made back when acting and dialog were still important, and the remake just doesn't compare in those regards. I think some of the better remakes have been the 'heist' movies. Italian Job Ocean's 11 Mostly because those movies are just cool, and it's a lot easier to replicate that than great acting/directing.
There probably isn't room to list all the god awful attempts to copycat Animal House. All the TV-->Film disasters could also take up an entire web site. On that list, the Psycho remake is the most appalling. Partly because it stripped all of the genius of the original... Evan
