I don't watch much Anime but here is what I'd recommend. Code Geass Bleach Full Metal Alchemist: Brotherhood (new series of the original on adult swim) Bleach isn't too great early on but it gets good once you reach the Hueco Mundo arc.
Nerd checking in... If you like more suspenseful stuff, have you ever seen Paranoia Agent? Sounds like something that might be up your alley, though it is older than 2005. I've honestly been in the dark over the past few years, so I'm not that current. Speed Grapher seemed cool from what little I saw, but never got around to finishing it. How about Monster? I haven't seen it myself, but I've heard good things.
One of the greatest anime series of all time and the manga is still going strong... Saw Berserk about a year ago. I believe the anime only covered an arc & change of the manga, so the storyline is a bit incomplete. Plenty of WTF moments in the 2nd half of the series.
Stan Lee(, yes, the Marvel guy) has a collab project with Studio Bones, Heroman: , currently airing in Japan.
My brother is a HUGE anime nut, and is always pushing what he deems to be the "best stuff" at me, haha. My favorites that I've watched are definitely Death Note and GTO (Great Teacher Onizuka). I also enjoyed Claymore. He also greatly recommends: Texhnolyze, Paranoia Agent, Hellsing Ultimate, and X (yes, that's the entire name of the show). I can't personally recommend any of those since I haven't seen them, but if he claims they're good, they probably are.

Seen Ghost in the Shell. (meh, it was OK, not really my thing) Seen both Code Geass. (also OK, also not generally my thing) Saw Bleach until it got completely stupid and full of waste. Seen Speed Grapher. (good show) Seen Berserk (freaky ending, but good). Seen X. (meh) Saw some Hellsing, didn't like it. Saw some GTO, didn't like it. When you say you've seen GitS, do you mean the movie or the TV series? I think both seasons of SAC are terrific, but to each his/her own.
If you liked Berserk, checkout Gantz. It's also gratuitously violent and abrupt. I liked the first half of Kenshin. It drops after the Tokyo arc. Hitman Reborn- shonen comic Legend of Galactic Heroes- space opera
Endless Eight pretty much killed me off from anime completely, but I'll throw out the When They Cry series (Higurashi and Umineko, respectively) or A Certain Scientific Railgun as not bad series.
FYI, I saw the original Hellsing and didn't like it at all. Hellsing Ultimate is supposedly a whole new ballgame, though. Also, almost forgot: I also saw Elfen Lied. Like Berserk and Claymore, it's absurdly violent... pretty good stuff.
Elfen Lied was good. Absurd violence isn't what attracted me, hence why I liked Berserk and Elfen Lied but not Claymore (oddly).
