Chili gravy on enchiladas? This is an insult to the glorious comrades who fought alongside pancho villa! =( For tex mex I really like Lupe tortilla and tomatillos in San antone'. Also, Pancho's mexican buffet! It's cheap, greasy and yummy.
Ruby Tequilas easily has the worst texmex I'm Houston. I live across the street and have tried it on multiple occasions, the food is horrendous. Taco cabana has much better food at half the price, which says a lot. Lopez is a must try for texmex lovers (59 and Murphy rd.)
THIS! I'm also a pretty big Escalantes fan. I ate at some place in the Edwards Cinema / Dave and Busters off I-10 that was pretty damn good too.
What separates Ninfa's for me is it comes with their freshly made corn tortillas, which are top notch. Flameado needs really good tortillas to maximize its potential. El Meson in the Village has actually been there for quite a long, long time. But it is unassuming. It's easy to miss, and easy to forget about. It's on University (south side) towards Mourningside...across from where the Village Theatre used to be.

I recommend everyone try Tamales Dona Tere . They are the best i've ever had( next to my mum's of course). No little small tamales, they are real big tasty tamales. It goes well with some champurrado I know a thing or two about tamales.......trust me, i mexican http://www.tamalesdonatere.net/english/tamales.htm they have 3 locations in houston... try my favorite: Chicken with Mole Spoiler
This. 59 and Wilcrest, take a right going southbound on 59. www.vivalopez.com/ I first ate Lopez when I was this big. Spoiler Best salsa. Best enchiladas. Best beans and rice.
If any of you are ever in El Paso, you must try Leo's in one of their locations. It is El Paso Tex-Mex comfort food.
Pancho's in most things is pretty bad, but for some reason they can make decent Chile Rellenos. Strange.
Had a friend that used to work there, here's the recipe he gave me for it: 3 jalapenos (chopped off stem) 1 avocado 1 package Hidden Valley Ranch (Buttermilk recipe) 1 cup of mayo 4 knorr cilantro cubes (use more or less as you please) you can also use 1/2 cup of milk and 1/2 cup of sour cream in place of the Ranch. Pugs
Ninfa's on Nav has overtaken El Tiempo as my favorite lately, but they're both solid. I prefer traditional combination plates at Ninfa's, while the grilled items at El Tiempo are superb. While I agree that the salsa at Cyclone's is pretty amazing, I think their food is just average and way over-priced. I prefer Terlingua, which is located on Studemont and owned by the same family as Cyclone's. It's cheaper, and I think better. Another one of my favorites for anyone on the southeast side of town is Border Grill and Cantina in Pasadena. They have a dish there called the Salsa Pollo that is my favorite tex-mex dish of any restaurant. I won't even go to Chuy's anymore just because the food is so blah.
It is in Rice Village on University but it is not a Tex-Mex place, it is a Cuban/Spanish restaurant, if you go there, I would recommend you get one of those types of dishes enchiladas are only meh
Spanish Village on Alameda has the best cheese enchiladas in town. A Houston Tex-Mex institution of many years it has a nice dive-like tacky ambiance and good ritas (made with cheap tequila the way they should be). The menu can be hit and miss (stick with the basic Tex-Mex) but if you haven't tried it give it a shot.
