I've gotten into Veronica Mars, Freaks and Geeks, Firefly, and Arrested Development after they were done. I love all 4 of those. I still haven't finished Freaks and Geeks or Arrested Development though, I need to.

Lost. I'm on Season 1, Episode 3. It's pretty good so far. But I heard it got cancelled after like 5 seasons.
Firefly was a potetial game-changer. Had FOX not bungled the handling of it so badly, it would have spawned a whole new era of copycat intelligent sci-fi with character-focus. Aw well. Being the cartoon freak I am, I'd love to see "Gargoyles" added to this list, as well.
They so much left to explore, too. Sigh. Apatow's follow up, "Undeclared," was another show that got axed way too soon.
Season 1 of "Jericho" was great. Much, much better than I expected. Season 2 was a massive letdown, which kinda speaks to what sbyang was saying. Sometimes less is more. "Carnivale" was so very, very good if (and it's a big "if") you were patient enough to appreciate the deliberate pace of the plot and character development. But the look and feel of the show was just so perfectly creepy, and the casting was spot-on. My wife and I still call Clancy Brown "Brother Justin" whenever we see him on screen. I never could get into Arrested Development, despite being a fan of many of those involved with the show.
Probably one of the most underrated shows: Arrested Development I was also a big fan of: Firefly (I don't love it as much as some of you) Gargoyles Kindred: The Embraced (long before this vampire overload ****) Dark Shadows (NBC's remake in the early 90's) Life on Mars Rome (although I don't know how much further they could have gone with it) Deadwood (same as Rome) The Tudors (once again, the same problem as the two above, although I wouldn't have minded if they continued the story with Mary taking the throne) And probably one of the best comedy shows of all-time: News Radio (Jon Lovitz wasn't as funny as Phil Hartman, but the show was still funny).
I may be in the minority here, but really enjoyed "The Sarah Conner Chronicles". Sure, it was a bit cheesy at times, and didn't follow the movies well, but it was engrossing for those of us who are huge fans of the movies. It ended too soon.
Phil Hartman died and the show just wasn't the same, though it wasn't bad. It doesn't really fit with the others on this list. One of the best shows ever though.
"Action" was one of the funniest things I've ever seen. The problem was it came a few years too early. It should have came out when premium channels started putting out half hour shows. Then it could have run unedited and been a LOT better. Still though, Jay Mohr was awesome. Still got it on DVD and I watch it quite frequently. One they missed was "Kitchen Confidential". Based loosely on Anthony Bourdain, starred Bradley Cooper, Nicholas Brendan, John Cho, and Jaime King. Great stuff. My sister brought up "Homefront", but I think that's jsut because she's crushing on Kyle Chandler.
first season of Veronica Mars is one of the best of any show ever, great acting and dialogue, and a clever season long mystery that keeps you guessing until the very last episode

I really don't think Arrested Development can be called "underrated" anymore. Everyone has pretty much seen it or knows of it by now. It has certainly reached cult classic status moreso than almost any other TV Show cancelled early. At least it had 3 seasons. Firefly had only 15 episodes and a movie :/
Dog Bites Man on Comedy Central was an amazing show. It had Zach Galifianakis on it. Might have been the funniest show I have ever seen.
