Out of college i was training to be a loan officer at a bank catering to small businesses. My number one rule from banking, never give a restaurant loan to someone who has never run a restaurant. Restaurants are very nuanced businesses. A lot of people can run well known franchises but starting your own restaurant can have all kinds of unforseen consequences.
