Unless you make the laws, you really can't write USDA "insert crossbred cow here" grade on your meat. Anything below standard is not really checked but prime, choice and select are measured according to marbling and maturity. That makes the system somewhat reliable.
I've got to stop by this place one day. It gets good reviews for not really being a BBQ restaurant. I also like the fact it's a simple place and not some big-time chain.
yeah but I could say to be "Certified Crossbred" it has to be crossbred and USDA Prime. I am not changing what Prime means.
Anyone been to Vitek's in Waco..Damn good food.. They have this thing called the gut pack, its amazing. so yummy BBQ Your Choice of Sausage Fritos Beans and then you can add peppers,pickles, and jalapenos if you want and two slices of bread all shoved into a container and then you shake it up and enjoy..anytime yall are coming through waco I definitely recommend Viteks.
Holy Crap Ive been there before. I went whenever my family went to the SFA/Sam Houston basketball game in Huntisville. Those ribs were so freaking good. sorry for the triple post lol

I agree, Snow's is great. Kreuz Market is still my favorite. I just like the fact that you eat with your hands and the idea of no sauce. Smitty's, an offshoot is good and Louie Mueller's is right there as far as BBQ goes, everything else is second tier. Not a fan of Black's. I'm not a fan of Salt Lick, but the sauce is good. I do like Rudy's potato salad and for a chain, it's my favorite, good all around. Lambert's is good, but not a true bbq joint. I live in Dallas, so it just sucks. Sammy's is decent, but not the same. I gag at Dickey's gas bbq, disgusting. Same with Sonny Bryant's.
I was watching Travel Channel and they were talking about Carolina bbq (mustard based). I wanna try it. Is there any place in Houston that has it?
Exactly... he's wearing working clothes and not some fancy embroidered polo shirt with flair. You can tell he wants to be there and takes pride in what he does. He's devout, authentic, an individual, a Texan, a BBQ man.
Anyone have recommendations in Houston and not just Central TX? I was told about Pizzatola's (sp?) on Shepherd, but have never seen it mentioned in the numerous BBQ threads. Any other recommendations? Any part of town, really, though I spend a lot of time near the Village.
