Delicious. Lamb or cabrito is the way to go.

Tacos Dona Lena in Spring Branch has the birria you want. Places you go for brunch, like Urbe, are not where you want to be eating birria at. Urbe is a huge disappointment overall IMO. The pastries are CUTE though.

Y’all want good tacos? Go to any spot inside the sunny side / aka tia pancha flea market during weekends.

Solid recipe. Total pain in the ass to do at home. https://uproxx.com/life/best-birria-taco-recipe-cinco-de-mayo-2022/

Me and the hombres always used a crawfish cooker and then cast iron.

Believe it or not, Taco Cabana's Crispy beef tacos are as good as any sit down Tex Mex place.

If you need a sit down, Molina's, Los Tios, Chuys, Cyclone Anayas are all good.

Here's my version of the Jumbaco:

Here’s the dumbest recipe I’ve ever come up with, but I LOVE these so much, and they are so simple!

take hot owens breakfast sausage and brown in a skillet. Use a spatula to crumble (like taco meat) as you are browning. Feel free to put in a colander afterwards to drain some of the copious amounts of rendered fat.

Scramble eggs. How? Your favorite way.

take CRISPY corn taco shells and put the crumbled breakfast sausage in them like taco meat. Put scrambled eggs on top. Top the eggs with shredded cheddar. Top the cheese with your favorite salsa. I’m really into the hot salsa from the fresh produce department at HEB, but this white trash recipe works great with something like Pace too. Eat and enjoy! Something about the crispy shell turns this typical breakfast taco into something special.
