    And on the meat I like the "charred and scruffed" technique as seen here in Houston at Churasco's...with 15 min prior rub seasoning...

    With good meat you're going to get a great taste, cutting it open, and cooking it short but in lots of different ways, with lots of juice and flavor. Perfect medium rare.

    And the tech means you watch it so it doesn't burn. ;)

    I like it that its sectioned so you can throw more charcoal on if needed by removing just a part of it.

    What are some good butcher markets in town to get great steaks at the best price?

    A good steak won't vary much in price I think. I always get my steak from either HEB or Whole Foods.

    But I am curious to see if there are any local butchers that offer a better quality meat?

    HEB, Kroger, and Randalls have good quality steaks. Walmart steaks are the worst. Walmart food quality is usually pretty good but I don't know what they do their steaks.

    My favorite grocery stores to buy a steak at are HEB Buffalo Market, Central Market, and Beldens.

    My favorite butcher shop to buy a steak at is Pete's Fine Meats on Richmond Ave.

    Off topic but........is there any way that you, you could just sock me out so there's no way that I'll know I'm at work? Can I just come home and think I've been fishing all day or something?

    I don't have an outdoor grill. I have an unopened George Foreman Grill...can i still make the steak delicious on there? I tried the pan and oven thing last week and it was crap. I like that charred and crusty look on top with medium rare inside. Teach me. My body is ready.

    I usually cook mine on a cast iron grill skillet which I place inside the grill at 500 degrees. Just a few mins on each side is all it needs.

    no, no, no.....NO!

    the secret to a great steak is seasoning and high heat. you can't get high heat with a george foreman grill. if you want a small, portable grill big enough just for 2-4 people, i recommend this:

    steaks come out amazing. the charcoal will give you that charred crust you want.
