Yes, you must cook it a little. Trichinosis is not as prevalent anymore because of health safety protocols. It is safer now to eat a pork steak less than well done. Most people just don't try it. But at some nice high end restaurants it can be done correctly.
Rare - Medium Rare depending on quality and cut of the steak. I don't eat steaks out anymore so it is always cooked on my grill or on my cast iron pan. I have started playing around with the cast iron under the broiler and they have been incredible.
Depends on the cut. For filets, sirloins, tenderloins I like it more medium rare to rare side. For ribeyes, T-bones and back ribs I like them cooked medium.
I always order it rare, then I keep sending it back until it's well done. Then complain about it until I get a discount when it's time to pay.
