IMHO, he does it in part because he has a titanic ego, but from a more practical sense, it's to reassure investors and potential investors that he has matters well in hand. So when he goes to a potential workout meeting, he can offer his creditors assurances of some decent gains in the future, if they only were to cut him a little slack now.

Creditors with faith in Fertitta might agree to wait, see what happens with Landrys reopening, and maybe the Nugget too, and perhaps they'll be rewarded with an early repayment or some other goodie, down the road. Creditors with no faith, won't agree to wait, and may insist on immediate redemption of the obligation. Or see him in an involuntary Chapter 11 proceeding. Which would hurt everyone, but might rationally be the way to maximize return on a shaky investment, in the eyes of an investor that lost their faith.
