When I'm drinking beer over a period of time, chips and salsa really do it for me (when drinking anything, really), but pizza is good too. I like food I can come back to after various levels of drunkeness, so I'm not big on set meals like steak and whatnot.

    What's yours?

if you say something like chicken alfredo you're dead to me

This seems obvious to me -- I don't see how you could improve on this combo.

I also like french fries with a big bunch of malt vinegar on them, when having beer.

    for some people it is

you get guinness on tap and its almost just like an entire meal

Fried catfish and shrimp with Ice Cold whatever.

    Roast with potatoes with Guinness

Shrip Brochet with Dos Equis Amber.

On big game days I always have Pella Bologna on hand, so I slice it up and have a snack platter with apples, cheese, crackers, olives, home canned pickles, etc.
