I recently had some killer lobster bisque at a nice restaurant in town and I want to try and make my own with fresh lobster meat. It's so damned expensive though. Why?
Lobsters are rarely grown commercially in fish farms. So almost all the harvest comes from the wild. The leading harvesters are in Maine, Australia and New Zealand. It takes a lobster 2 full years to reach marketable size. The quantity of lobster has been decreased in last years due to overfishing, yet the demand is in the increase. Speculation was my guess too. Although the declining numbers can't be helping. Love me some crawfish, can't wait for the HUGE block party in north west houston again next year. Kegs, Gumbo, Crawfish. hmmmm.....
Watch that show called "Deadliest Catch." Thats a good start as to why the cost. Those guys have to be well paid to do what they do...
yep, just shows your if your Crazy and want to make some good money. Go be a pro crabber or lobster guy... they make bank.

I'm not sure you're aware of how Lobster are caught. Damn near the laziest job you could have. Step 1: Get authorization to set a trap. Step 2: Buy a trap. Step 3: Put rotting fish in a trap and throw it in the ocean. Step 4: Profit.
