With draft speculation heating up to include trade possibilities, I think only Amen, Cam, and Sengun are the only untouchables for pre-draft scenarios. Jabari might be on this list too but I feel like he’s been a bit disappointing. All others in can see being dangled if the right scenario presents itself.

Amen and Sengun are "untouchable" in the sense that I can't imagine a team giving up what I'd take for them.
I hope Eason is healthy enough to be untouchable. Concerning that I still know nothing of what's going on with him. He has the potential to be a major difference maker. Otherwise, I'm in agreeance with Amen. I think, for the right price, you could shop Sengun and Cam.
No one. There's no stars on the Rockets, anytime could be had for the right price. Sengun would have the highest price since he's the closest thing to a star the team has. Jalen Green or Dillon Brooks could be had for a bag of all dressed chips.
Amen, Jabari, Sengun. Cam is a close 4th. Tari and Jalen could be had but the player it would take to get them is not on the market.

There's always a price, unless you literally think a guy is the future MVP of the league. But it's very difficult to see a team being willing to pay what those guys are worth to us right now.
The entire core six +1 is untouchable. There is just nobody young available that can give you more than the trajectory our young players are on. It's not potential anymore. They're doing the thang for pennies. FVV is the plus one, the veteran leadership.

I would not trade any of the core 6 yet. The only caveat to that is Jalen. If it were up to me Jalen's fate would rest squarely on his shoulders. If he does not come out of the gate ready to play from game #1 then I would be looking to move him. I would give him 10 games max to get his crap together. I have high hopes this is his year to put the inconsistency to rest for good but I would not waste much time if he doesn't.
