first off, Mexico has about 5 distinct cuisines, noticeably different from each other.

TexMex is generally our version of the Indian cuisine...with tortillas, beans, rice as the staples.

The main difference between TexMex and what you are calling "authentic Mexican" is the abundance of cheese in TexMex, bad fried stuff, and the invention of the burrito...and the way we do enchiladas. The sauces can be quite different. And our fillings are different. The Margherita is also a TexMex invention.

my follow up questions would then be, 1) what's the differences in the 5 cuisines? and 2) are there any recommended authentic restaurants down here.

and, as a side note, how about cuban restaurants? i ate at a really good one in LA one time, but that was years ago and i haven't had any since.

There used to be this place off of I-10 near IKEA called "Otilia's". Don't know if it's still there though.

The difference is like most large countries. Different areas were influenced differently by history. They also have much different regional ingredients. The coastal areas are more seafood oriented. Yucatan and Baja are very distinct. The southern is more like Latin American food. North is cattle country. etc.

Authentic is much better than Tex-Mex imo.

Good authentic places I like- Hugo's, Otilias, and for cheap- Tapatia on Richmond.

Tex Mex is what they have at Cafe Adobe, Papasito's, Chuy's.

Maybe we should just give you admin rights then. You can then go around locking every Mexican thread you want.

It's funny you are bragging about Mexico tying the US. I guess that's a pretty big accomplishment for you guys.

If you want some pretty tasty authentic mexican, go to 100% Taquito. It's a bit overpriced but it's really good. After eating there, you will understand the difference if you eat a lot of Tex Mex
