Does anyone know of a good software that can be used to change files from DVD format as well as from a video recorder that would enable me to convert the files into a format that could be either posted on youtube or something similar?

Something easy to use, yet still affordable?

i actualy think microsoft's proprietary moviemaker program actually does that. I used it to convert the video file from my camera into a file more suitable for youtube.

Just make sure you convert it into a DV-AVI file instead of the default WMV9 setting.

Video editing is a pain in the butt. I suggest checking out afterdawn.com or videohelp.com for their visual step-by-step tutorials.
